Low-Sodium Recipes

After some health issues a few years ago, my husband decided that he would go on a low-sodium diet.
While the daily recommended intake of sodium is generally listed as 2500 mg, he aimed for 600 mg or less per day. As someone who enjoyed chips and chicken wings, I have to admit that I sincerely doubted his capacity to stick with this plan.

Many people attempt to limit the sodium in their diets by simply not using the salt shaker on the dinner table; in fact, only about 10% of your daily sodium intake comes from added salt. The real culprits are processed foods; you might be surprised by the sodium levels in some common foods like store-bought breads and cereals.

Almost three years later, my very determined husband has not eaten a single flavoured potato chip. He has, however, found salt-free potato chips, and I have either found or made homemade versions of most other favourite foods. Often I can just eliminate the salt in a recipe, and our palates have adjusted enough to compensate. In fact, now when I eat something that contains added salt, my lips will burn for hours afterward, and I'll be terribly thirsty for the next 24 hours!
